How To Make Fried Potatoes and Onions, Peppers with Smoked Sausage Recipe

To make this recipe you'll need the following ingredients:

Ingredients fried potatoes and onions

  • 2 lbs baby red potatoes (you can also use gold potatoes or regular red potatoes), cut into 1 – 1 1/2 inch pieces.
  • one onion, sliced into thick half circles
  • one red bell pepper, cut into 1-inch pieces
  • 8 oz of smoked sausage or kielbasa (for me I use smoked Polish kielbasa), cut into 1-inch pieces.
  • 8 oz of fresh mushrooms (white button, baby Bella, etc.), cut in half or quarters.
  • 1/4 cup of olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon of fresh thyme
  • 1 Tablespoon of spice/ dry herbs blend
  • ground black pepper, salt
  • fresh herbs, minced (thyme, chives, parsley, dill, etc)

Instructions for air fryer potatoes and onions: 

First, preheat the oven to 475 degrees Fahrenheit, Then place a large rimmed baking sheet into the oven at the same time, so that it heats up while you are prepping all the ingredients.


And scrub the potatoes really well then cut them into 1 – 1½ inch pieces. And place them into a medium pot, then fill it with water, so that the water is just barely covering the potatoes. 


And bring it to a boil, then reduce to a simmer and cook for about 6 minutes, covered, just until the potatoes are halfway cooked through. And drain the potatoes.


After that, cut the mushrooms in half or in quarters if they are very large. Then slice the onions into thick half circles. And cut the bell pepper into 1-inch pieces, then slice the sausage into 1 - inch pieces.


And in a large bowl, combine the onion, mushrooms, bell pepper, olive oil, fresh thyme salt, minced garlic cloves, freshly ground black pepper then a mixture of dry herbs.


And when the potatoes are halfway cooked, gently toss them with the mushroom then pepper mixture, along with the sausage.

Then take out the searingly hot baking sheet from the oven and quickly spread everything out in one layer.


And roast in the preheated oven, uncovered, for 19 - 29 minutes, until the vegetables are all cooked through then golden brown, turning everything over halfway through cooking. 


Then you can broil the dish during the last few minutes of cooking to give it extra brownness then a slight char.
