• 1 cup of grated  Swiss cheese (about 125 g/4 oz)
• 2 tomatoes, thinly sliced
• 3 tbsp. Sweet Spirited Mickie Bourbon BBQ Sauce
• 4 large of whole wheat tortillas
• ¼ cup of pesto

Follow these directions to prepare this easy Cheese Steak Quesadillas Recipe:

First Step, place the skewers on the grill of the barbecue preheated to medium-high intensity. 

Then grill, for 4 to 5 minutes per side, until an instant-read thermometer is inserted into the meat registers 71˚C (160˚F) for medium doneness, or until the desired doneness.

Brush the skewers with barbecue sauce, and put them on a plate. Then remove beef and vegetables from the skewers. And let stand 6 minutes, then cut into bite-size pieces.

And for each quesadilla, spread 15 mL (one tbsp) of pesto on half of one side of each tortilla. 

And on the pesto half, layer 60 mL (¼ cup) of cheese, a quarter of the tomato slices and a quarter of the beef then the vegetable mixture.  after that, fold the tortilla over to cover the filling. Then repeat with the rest of the tortillas.

In this Step, place the folded tortillas on the barbecue grill and cook, for 2 or 3 minutes per side, until the cheese begins to melt then the tortilla is crispy. 

Then transfer the quesadillas to a cutting board then cut each into four wedges. Then serve with sour cream for dipping. Enjoy!
