TOMATO SANDWICH
The preparation is very simple and doesn't require much explanation. Obviously, this sandwich is only worth it when the tomatoes are at their absolute peak. Traditional specimens are picked green, gassed to give a fuzzy orange-pink hue, and traditional specimens that are supposed to survive days on produce shelves won't make it. Bread doesn't have to be fancy, and while toast is an option, it doesn't really need to be: the softness and sweetness of plain white bread is exactly what you want, absorbing tomato juice as it drips, mixed with mayonnaise.
When it comes to mayonnaise, enthusiasm may be running high, although Duke's, a Southern brand known for its thick and creamy taste, is the brand many swear by.
Given how easy a tomato sandwich is, maybe the next time I find myself in a field surrounded by tomato vines, I'll have not only salt but some bread and mayo.
HOW TO MAKE A TOMATO SANDWICH
Ingredients:
- for sandwich
- 4 slices of white bread
- 1 large beef tomato
- 2-4 TBSP Dukes Mayo (to taste)
- kosher salt
- cracked pepper
Instructions:
Cut the tomatoes into medium-thick slices and set them aside.
Sprinkle mayonnaise on every slice of bread.
Place tomato slices on one slice of bread and sprinkle generously with salt and pepper to taste.
Adding a last tranche of bread on top to making the sandwich. Enjoy!
