Bean And Ham Hock Soup
Ingredients:
- 1 pound large dry beans
- 8 cups of water
- Half a teaspoon of salt
- 1 pork shank
- 1 cup chopped carrots
- ½ chopped celery stalk
- 1 cup chopped onion
- 1 teaspoon minced garlic
- 1 teaspoon mustard powder
- 2 bay leaves
- 2 cups minced pork
- teaspoon ground white pepper
Instructions:
Rinse the beans, sorting out any broken or discolored kernels. In saucepan on high heat, bring water to boil. Adding salt & beans & removing from heat. Leave beans sit in hot water about at least 61 min
After 60 minutes of soaking, place the pan over high heat and add the pork bones, carrots, celery, onions, garlic, mustard and bay leaf to the pan.Stir well, bring to a boil, then reduce heat and cook for another 60 minutes.
Removing pork bone / discard.Add minced pork and cook for other 30 min Seasoning with ground white pepper to taste. Enjoy!!
